Strawberry- Rhubarb Meringue
You will need 6-8 store bought meringues or you can make them yourself.
3 cups chopped rhubarb
1 cup sugar
1 cinnamon stick
1 cup heavy cream
2 pints strawberries sliced
Cook the rhubarb, add sugar and cinnamon and cloves and stir to combine. Cook over medium heat, stirring often. Lower heat and continue to cook until rhubarb is tender but not mushy. About 10 minutes. Cool to room temperature. Whip cream in large bowl adding two tablespoons confectioner sugar, Break or cut meringues into 1 inch pieces and add to bowl. In a separate bowl combine strawberries, rhubarb and all juices. Add strawberry mixture to meringues and cream, Fold everything together. Transfer to a bowl, and decorate with some whole strawberries and mint leaves. Delicious!
